Carrot and fruit cake

Ingredients:
For cake--
- 1 and 1/2 c. sugar
- 1 and 1/2 c. oil
- 3 eggs
- 2 tsp vanilla
- 2 tsp flour
- 2 tsp cinnamon
- 1 tsp baking powder
- 1 tsp baking soda
- 1 tsp salt
- 2 c. carrots
- 1 c. nuts
- 1 tin crushed pineapple

For icing--
- 3 c. icing sugar
- 1 8oz packet cream cheese
- 1/2 c. butter, softened
- 1 and 1/4 tsp vanilla extract

Method:
1. Mix sugar, oil, eggs, vanilla
2. Sift in flour, cinnamon, bs, bp, salt.
3. Add carrots, nuts, pineapple... and anything else
4. Bake at 175 degrees celsius for 40-55 min.
5. Allow cake to cool.
5. Cream butter, cream cheese and icing sugar. Mix in vanilla. Spread over cake.
